Taco Ring

Taco Ring

This recipe is a twist from Pampered Chef, I love it! I have made it for years. It is my nieces favorite

Ingredients
1/2 lb ground beef fully cooked
1 can re fried beans (I use El Paso)
1 package taco seasoning mix (I use Old El Paso)
1 cup shredded cheddar cheese (shred your own, it's cheaper)
2 packages refrigerated crescent roll dough
1/2 head shredded lettuce
1 small tomato cut into chunks
1/2 cup sliced black olives
1 cup salsa
1 cup sour cream

Putting it All Together
Preheat oven to 350 degrees
Combine meat, seasoning mix, cheese and re fried beans in a medium pan over medium heat
Arrange both packages of crescent triangles in a circle on a round baking stone, the crescent's should over lap and look like a sun.
Scoop the meat mixture onto the crescent rolls and tuck the tops over the bottom of the crescents.
Bake for about 20 minutes

Place the lettuce, tomatoes and olives in the center of the circle.

Serve with the sour cream and salsa on the side.

As many of you know, I am a first grade teacher which means I don’t get paid in the summer. My husband and I have a great budget so we factor this in. After scoping out my pantry and linen closet I have decided to challenge myself to a “No Spend July.” The only exception to this is David’s 29th birthday on July 12th, we will be hosting a birthday party for friends and family. My goal for the party is $30 for everything including food/drinks and gift.

Here’s My Goal for the month of July
- Spend no more than $20 a week on gas/milk/produce groceries (using gift cards for as much of this as possible)
- Find creative recipes to utilize all of the food in my pantry/freezer
- Throw my husband an AWESOME 29th Birthday Party for 20 guests
- Enjoy as many vegetables from my garden as possible
- Find fun free entertainment
- Still “rock” free deals or deals that I pay pennies out of pocket. I still have RR’s to roll, Up+ and ECB’s!

What Will I do with the Money We Save?
- All of the money we save will go in an account to serve as an emergency fund for our family.

My Progress:
Yesterday I spent $3.99 total! $1.00 paid my tax at CVS and $2.99 was used for lettuce. I still have $16.01 left for the rest of the week.

Sobe Heads or Tails Game

No Spend July Day: 1 Tequila Chicken

Tequila Chicken


4 Chicken Breasts
1 cup Tequila ( I only use Jose Curevo)
2 cups crushed Tortilla Chips
1 cup Salsa
1 cup Ranch Dressing
2 Cups Cheese ( I shred my own, it is much cheaper)




Marinade the chicken breast and tequila over night in a covered dish

Grill Chicken until completely cooked, set aside


Combine ranch and salsa in a small dish, stirring until well mixed

Crush Tortilla chips. The easiest way to do this is to place chips in a sealed bag, run a rolling pin over the chips until coarsely crushed.




Poor chips into a 13 x 9 in pan

Place chicken on top of chips

Spoon a generous amount of salsa/ranch on top of chicken

Sprinkle cheese on top of salsa/ranch mix

Place in your broiler until cheese browns

I serve this delicious with sides of salsa, sour cream and salsa/ranch mix

We ate it too quickly for me to remember to take a photo! Sorry!

It is SO yummy! I use fat free ingredients! Which makes me feel much better about serving this meal!

I spent $3.99 Today

No Spend July Day 1
I need to start this post by saying that Price Chopper, CVS and Rite Aid are 3 minutes from my house. In fact I pass every time I drive anywhere. I am a lucky girl, because I am not spending (a lot) gas to shop my favorite stores. If you do not live 3 minutes away from the store it is not in your best (saving money) interest to head to the store multiple times a week. Now that I am home alone from 8:30 to 7:00 each day I look forward to these shopping trips.


My CVS TRIP


My fabulous friend Amanda let me know that your Spring Spending ECB's were printing at CVS today! So I decided to head over and see how much I had.
